Ingredients

  • 1 ½ cups flour
  • 1 cup sugar
  • ½ cup butter (softened)
  • ½ cup coconut milk
  • ½ cup shredded coconut
  • 2 eggs
  • 1 ½ tsp baking powder
  • 1 tsp vanilla extract
  • ½ tsp nutmeg
  • Pinch of salt

Frosting (optional)

  • 1 cup icing sugar
  • 2–3 tbsp coconut milk
  • Extra shredded coconut for topping

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Cream butter and sugar until light and fluffy.
  3. Add eggs one at a time, then add vanilla.
  4. In a separate bowl, mix flour, baking powder, salt, and nutmeg.
  5. Add dry ingredients to the butter mixture, alternating with coconut milk.
  6. Fold in the shredded coconut gently.
  7. Pour batter into a greased baking tin.
  8. Bake for 25–30 minutes, or until a toothpick comes out clean.
  9. Cool completely before frosting.

Frosting (Optional)

Mix icing sugar with coconut milk until smooth.
Spread on top of the cake and sprinkle shredded coconut like snowy blessings.
