Our Comfort Stew of Togetherness is a rich, tomato-based dish that can be made with chicken, beef, or even wholesome vegetables. Infused with vibrant African spices, it’s the perfect meal to share with loved ones, all served over a generous helping of rice, yams, or plantains.
Ingredients
- 1 kg beef or chicken (cut into chunks)
- 4 tomatoes (blended)
- 2 onions (1 blended, 1 chopped)
- 2 bell peppers (blended)
- 2 tbsp tomato paste
- 3 cloves garlic (minced)
- 1 tsp ginger (grated)
- 1 tsp curry powder
- 1 tsp thyme
- 1 stock cube or chicken seasoning
- Salt & pepper to taste
- 2–3 tbsp oil
- Optional: carrots, potatoes, peas
Instructions
- Season the meat with salt, pepper, garlic, ginger, and a little curry. Cook until browned.
- Add chopped onions and fry until softened.
- Add tomato paste—cook for 2 minutes.
- Pour in blended tomatoes & peppers. Cook until the sauce thickens.
- Add curry, thyme, and a stock cube—stir well.
- Add vegetables (if using), reduce the heat, and let simmer until tender.
- Taste and adjust seasoning as needed.
- Serve with rice, yams, or plantain—share with those you love.
