Ingredients
- 250 g spaghetti
- 2 egg yolks
- 2 tbsp white miso paste
- 50 g parmesan or hard cheese (or any African hard cheese)
- 1 tbsp butter
- 1 garlic clove (minced)
- 1 tsp crushed chilli or pepper flakes
- Salt & pepper to taste
- Fresh parsley for garnish
Instructions
1️⃣ Cook pasta until al dente (save 1 cup pasta water).
2️⃣ In a bowl: whisk miso + egg yolks + cheese.
3️⃣ Melt butter in a pan, and add garlic and chili.
4️⃣ Add pasta to the pan and remove from the heat.
5️⃣ Pour miso-egg mixture over pasta—stir fast to keep creamy.
6️⃣ Add a splash of pasta water if too thick.
7️⃣ Garnish with parsley and extra chili. 😍
