Ingredients
- 1.5–2 kg beef joint (topside, brisket, or chuck)
- 3 tbsp olive oil
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tbsp paprika
- 1 tbsp dried thyme
- 1 tbsp dried rosemary
- Salt & black pepper to taste
- 2 carrots (chopped)
- 2 onions (quartered)
- 4 cloves garlic (smashed)
- 1 cup beef broth
- 1 tbsp Worcestershire sauce (optional)
Instructions
- Preheat oven to 150°C (300°F).
- Mix olive oil with garlic powder, onion powder, paprika, thyme, rosemary, salt, and pepper.
- Rub seasoning all over the beef, coating completely.
- Place carrots, onions, and garlic in a roasting dish.
- Set the beef on top of the vegetables.
- Pour beef broth (and Worcestershire if using) around the sides.
- Cover tightly with foil.
- Roast for 3½–4½ hours, until fork-tender.
- Let rest for 10–15 minutes, then slice or shred.
