Ingredients

Pounded Yam

  • 400 g yams (peeled & chopped)
  • Water
  • Pinch of salt

Efo Riro

  • 300 g spinach (or efo leaves)
  • 200 g assorted meat
  • 150 g smoked fish
  • 120 g onions (1 medium), chopped
  • 200 g tomatoes + pepper blend
  • 40 g tomato paste
  • 60 g palm oil
  • 1 stock cube
  • Salt & seasoning to taste

Instructions

Pounded Yam

  1. Boil yams until soft.
  2. Pound in a mortar or blend until stretchy and smooth.
  3. Shape and set aside.

Efo Riro

  1. Heat palm oil and sauté onions.
  2. Add tomato paste, then blended tomatoes and pepper mix.
  3. Cook until thick and reduced.
  4. Add meat, smoked fish, seasoning, and a stock cube.
  5. Simmer until flavorful.
  6. Add spinach and stir; cook 5 more minutes.
  7. Serve hot with pounded yams.
