Ingredients
Pounded Yam
- 400 g yams (peeled & chopped)
- Water
- Pinch of salt
Efo Riro
- 300 g spinach (or efo leaves)
- 200 g assorted meat
- 150 g smoked fish
- 120 g onions (1 medium), chopped
- 200 g tomatoes + pepper blend
- 40 g tomato paste
- 60 g palm oil
- 1 stock cube
- Salt & seasoning to taste
Instructions
Pounded Yam
- Boil yams until soft.
- Pound in a mortar or blend until stretchy and smooth.
- Shape and set aside.
Efo Riro
- Heat palm oil and sauté onions.
- Add tomato paste, then blended tomatoes and pepper mix.
- Cook until thick and reduced.
- Add meat, smoked fish, seasoning, and a stock cube.
- Simmer until flavorful.
- Add spinach and stir; cook 5 more minutes.
- Serve hot with pounded yams.
