Ingredients

  • 2 tbsp butter or olive oil
  • 2 large leeks (washed & sliced)
  • 3–4 potatoes (peeled & diced)
  • 1 onion (chopped)
  • 3 cups vegetable or chicken broth
  • 1 cup milk or cream
  • Salt & black pepper (to taste)
  • Optional: parsley or chives for garnish

Instructions

  1. Heat butter/oil in a pot and sauté the onions and leeks until they are soft.
  2. Add diced potatoes and stir for 2–3 minutes.
  3. Pour in the broth and bring to a boil.
  4. Reduce the heat and simmer for 20 minutes, or until the potatoes are tender.
  5. Blend the soup until smooth (or leave it chunky if you prefer).
  6. Add milk/cream, season with salt & pepper, and warm gently.
  7. Garnish with herbs and serve hot.
