Ingredients
- 2 large ripe plantains
- 2 eggs
- ½ cup flour (all-purpose or oat flour)
- 1 tsp baking powder
- 1 tbsp sugar or honey (optional)
- 1 tsp vanilla
- ¼ tsp cinnamon
- Pinch salt
- Butter or oil for cooking
Instructions
- Peel and chop the plantains.
- Add plantains, eggs, vanilla, and cinnamon to a blender. Blend until smooth.
- Add flour, baking powder, sugar (optional), and salt. Blend again until the batter is thick and creamy.
