Ingredients

  • 2 large ripe plantains
  • 2 eggs
  • ½ cup flour (all-purpose or oat flour)
  • 1 tsp baking powder
  • 1 tbsp sugar or honey (optional)
  • 1 tsp vanilla
  • ¼ tsp cinnamon
  • Pinch salt
  • Butter or oil for cooking

Instructions

  1. Peel and chop the plantains.
  2. Add plantains, eggs, vanilla, and cinnamon to a blender. Blend until smooth.
  3. Add flour, baking powder, sugar (optional), and salt. Blend again until the batter is thick and creamy.
  4. Heat a pan over medium heat and add a small amount of butter or oil.
  5. Pour small circles of batter into the pan.
  6. Cook for 2–3 minutes per side until golden and fluffy.
  7. Serve warm with honey, syrup, fruit, or a dusting of powdered sugar.
