Ingredients
- 1 kg potatoes (Maris Piper or russet are best)
- 3 tbsp vegetable or olive oil
- 1 tsp suya spice or paprika
- ½ tsp garlic powder
- Salt to taste
- Fresh herbs (optional)
Instructions
- Preheat oven to 200°C (400°F).
- Peel and cut potatoes into even pieces.
- Boil for 8–10 minutes until edges soften.
- Drain and shake the pot gently to roughen the edges.
- Heat the oil in a baking pan in the oven for 5 minutes.
- Add potatoes to the hot oil and turn to coat.
- Roast 35–45 minutes, flipping halfway, until golden and crispy.
- Sprinkle suya spice or paprika right after removing from the oven.
