Ingredients
- 400 g firm tofu, pressed & sliced
- 2 tbsp olive oil
- 1 small onion (finely chopped)
- 3 cloves garlic (minced)
- 1 cup coconut cream or dairy-free cream
- ½ cup vegetable broth
- ½ cup sun-dried tomatoes (chopped)
- 1 tsp paprika
- 1 tsp chilli flakes (optional)
- 1 tsp dried oregano
- 1 tsp dried thyme
- Salt & pepper to taste
- Fresh basil for garnish
Instructions
- Heat olive oil in a pan and fry the tofu slices until golden on both sides. Remove and set aside.
- In the same pan, sauté the onion until soft, then add the garlic for 30 seconds.
- Add coconut cream, vegetable broth, sun-dried tomatoes, paprika, chili flakes, oregano, and thyme.
- Stir well and simmer for 3–4 minutes.
- Season with salt and pepper.
- Add the tofu back into the sauce and let it simmer for another 3–5 minutes until flavours marry beautifully.
- Garnish with fresh basil and serve warm.
