Mani’s African Sunday Roast—Spiced, Tender & Made to Share

Ingredients

  • 1 whole chicken or 1.5 kg beef roast (your choice!)
  • 2 tbsp olive oil
  • 1 tbsp ginger paste
  • 1 tbsp garlic paste
  • 1 tsp paprika
  • 1 tsp suya spice
  • 1 tsp thyme
  • 1 tsp black pepper
  • Salt to taste
  • 1 lemon (juice)
  • 3 carrots (chopped)
  • 4 potatoes (quartered)
  • 1 onion (chopped)

Instructions

  1. Preheat oven to 190°C (375°F).
  2. Mix oil, ginger, garlic, lemon juice, and seasonings into a marinade.
  3. Coat the chicken or beef completely in the marinade.
  4. Place chopped vegetables around it in a roasting pan.
  5. Roast:
  • Chicken: 1 hr 20 min – 1 hr 40 min
  • Beef: 2 hr – 2 hr 30 min
  1. Rest before serving—slice and share with joy.
