Gizdodo is one of Nigeria’s most beloved party and street foods—a delicious mix of fried plantains and sautéed gizzard tossed in a rich, spicy tomato-pepper sauce.

🍽️ Ingredients (Serves 4 People)
For the Gizzard
- 500 g chicken gizzard (cleaned)
- 1 small onion (chopped)
- 1 seasoning cube
- ½ tsp thyme
- ½ tsp curry powder
- ½ tsp salt
- ½ tsp ginger powder
- Water (for boiling)
For the Fried Plantain
- 3 large ripe plantains
- Vegetable oil (for frying)
- Pinch of salt
For the Spicy Sauce
- 2 medium tomatoes
- 1 red bell pepper
- 1–2 Scotch bonnet peppers (adjust heat)
- 1 small onion (diced)
- 1 seasoning cube
- ½ tsp thyme
- ½ tsp curry
- ½ tsp paprika
- Salt to taste
- 2 tbsp vegetable oil
- Fresh parsley or spring onions (chopped)
👩🏽🍳 Instructions
1. Prepare the Gizzard
- Add gizzard, onion, seasoning cube, thyme, curry, salt, and ginger to a pot.
- Add a little water and cook until tender.
- Remove from the stock and cut into bite-sized pieces.
- Lightly fry or air-fry until golden.
2. Fry the Plantains
- Peel and cut plantains into cubes.
- Season lightly with a pinch of salt.
- Fry until golden and set aside.
3. Make the Spicy Sauce
- Blend tomatoes, bell pepper, and Scotch bonnet.
- Heat 2 tbsp oil and sauté onions.
- Add the blended mixture, seasoning cube, thyme, curry, paprika, and salt.
- Cook until the sauce thickens and reduces.
4. Combine Everything
- Add fried gizzard into the sauce and stir well.
- Add fried plantains last and gently combine.
- Sprinkle with parsley or spring onions.
