Ingredients

For the Fufu

  • 2 cups cassava flour/fufu flour
  • 2 cups plantain flour (optional for softness)
  • 4–5 cups water

For the Chicken Light Soup

  • 1 whole chicken (cut into pieces)
  • 2 tomatoes
  • 1 onion
  • 1 tbsp tomato paste
  • 2 cloves of garlic
  • 1 small piece of ginger
  • 1 seasoning cube
  • Salt (to taste)
  • 1 tsp smoked paprika (optional)
  • 1 hot pepper (whole—for flavor only)
  • 1–2 tbsp oil
  • Water (as needed)

Instructions

1. Prepare the Light Soup

  1. Blend tomatoes, onion, garlic, and ginger into a smooth puree.
  2. Add chicken pieces to a pot. Season with salt, seasoning cube, paprika, and a little oil.
  3. Add the blended mixture and tomato paste.
  4. Pour in enough water to cover the chicken and bring to a boil.
  5. Add the whole hot pepper (do not burn unless you want it spicy).
  6. Simmer 25–35 minutes until chicken is tender and soup is flavorful.
  7. Add more water if you prefer a lighter consistency.

2. Prepare the Fufu

  1. Bring 4 cups of water to a boil.
  2. Gradually add cassava/plantain flour while stirring continuously.
  3. Reduce the heat and pound/stir with a wooden spoon until smooth and stretchy.
  4. Add a little water if too thick—stir until perfectly smooth.
  5. Mold into round balls.
