Ingredients

Soup Base

  • 150 g ground egusi (melon seeds)
  • 300 g spinach or bitter leaf
  • 300 g assorted meat (beef, tripe, etc.)
  • 200 g smoked fish or stockfish
  • 120 g onions (1 medium), chopped
  • 150 g tomatoes, blended
  • 100 g bell pepper and chili pepper blend
  • 60 g palm oil
  • 2 stock cubes
  • Salt & seasoning to taste

Instructions

  1. Boil assorted meats until tender; set aside.
  2. Heat palm oil in a pot and sauté onions.
  3. Add blended tomatoes and pepper mix—cook until thick.
  4. Add the meat, smoked fish, stock, salt, and seasoning.
  5. Add the ground egusi in small scoops—do NOT stir yet.
  6. Cover and let it steam until the egusi forms soft lumps.
  7. Stir gently and simmer.
  8. Add spinach or bitter leaf and cook until rich and fragrant.
  9. Serve with fufu, eba, or pounded yam.
