Ingredients

  • 2 tbsp olive oil
  • 1 onion (chopped)
  • 2 carrots (sliced)
  • 2 potatoes (diced)
  • 1 cup chopped cabbage or spinach
  • 1 cup peas or green beans
  • 400 g chopped tomatoes (canned or fresh)
  • 2 cups vegetable broth
  • 1 tsp paprika
  • 1 tsp garlic powder
  • Salt & black pepper to taste

Instructions

  1. Sauté onions in oil until soft.
  2. Add carrots and potatoes—cook 5 minutes.
  3. Stir in tomatoes, broth, and seasonings.
  4. Simmer 20–25 minutes until veggies are tender.
  5. Add cabbage/spinach—cook 5 more minutes.
