Ingredients
- 2 tbsp olive oil
- 1 onion (chopped)
- 2 carrots (sliced)
- 1 courgette/zucchini (sliced)
- 1 potato (diced)
- 1 cup cauliflower OR broccoli florets
- 3 cups vegetable broth
- ½ cup cream OR coconut milk
- 1 tsp garlic powder
- 1 tsp paprika
- Salt & black pepper to taste
Instructions
- Heat olive oil in a pot and sauté onions until soft.
- Add carrots, courgette, and potatoes — cook for 5 minutes.
- Add cauliflower/broccoli, broth, garlic powder, paprika, salt & pepper.
- Simmer 20 minutes until all vegetables are soft.
- Blend the soup until smooth (or leave a little texture if you like).
- Stir in cream or coconut milk — heat gently and serve warm.
