Creamy Veggie Soup—Smooth, Comforting & Full of Goodness

Ingredients

  • 2 tbsp olive oil
  • 1 onion (chopped)
  • 2 carrots (sliced)
  • 1 courgette/zucchini (sliced)
  • 1 potato (diced)
  • 1 cup cauliflower OR broccoli florets
  • 3 cups vegetable broth
  • ½ cup cream OR coconut milk
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt & black pepper to taste

Instructions

  1. Heat olive oil in a pot and sauté onions until soft.
  2. Add carrots, courgette, and potatoes — cook for 5 minutes.
  3. Add cauliflower/broccoli, broth, garlic powder, paprika, salt & pepper.
  4. Simmer 20 minutes until all vegetables are soft.
  5. Blend the soup until smooth (or leave a little texture if you like).
  6. Stir in cream or coconut milk — heat gently and serve warm.
