Ingredients
- 2 tbsp olive oil
- 1 onion (chopped)
- 2 garlic cloves (minced)
- 1 can (400 g) of chopped tomatoes or 4 fresh tomatoes (blended)
- 1 cup vegetable broth
- ½ cup coconut milk or cream
- 1 tsp paprika
- 1 tsp sugar (balances the acidity)
- Fresh basil leaves (handful)
- Salt & black pepper to taste
Instructions
- Heat olive oil in a pot and sauté onions until soft.
- Add garlic and cook 1–2 minutes until fragrant.
- Pour in tomatoes and vegetable broth. Stir well.
- Add paprika, sugar, salt, and pepper.
- Simmer for 15 minutes to blend the flavours.
- Add coconut milk/cream and fresh basil.
- Blend until creamy using a hand blender (optional).
- Serve warm with bread or plantain chips.
