Ingredients

  • 2 tbsp olive oil
  • 1 onion (chopped)
  • 2 garlic cloves (minced)
  • 1 can (400 g) of chopped tomatoes or 4 fresh tomatoes (blended)
  • 1 cup vegetable broth
  • ½ cup coconut milk or cream
  • 1 tsp paprika
  • 1 tsp sugar (balances the acidity)
  • Fresh basil leaves (handful)
  • Salt & black pepper to taste

Instructions

  1. Heat olive oil in a pot and sauté onions until soft.
  2. Add garlic and cook 1–2 minutes until fragrant.
  3. Pour in tomatoes and vegetable broth. Stir well.
  4. Add paprika, sugar, salt, and pepper.
  5. Simmer for 15 minutes to blend the flavours.
  6. Add coconut milk/cream and fresh basil.
  7. Blend until creamy using a hand blender (optional).
  8. Serve warm with bread or plantain chips.
