Ingredients
- 2 cups mixed dried fruit (raisins, currants, cherries)
- ½ cup mixed peel
- ½ cup rum or orange juice
- 1 cup unsalted butter (softened)
- 1 cup brown sugar
- 3 large eggs
- 1 ½ cups flour
- 1 tsp baking powder
- 1 tsp cinnamon
- 1 tsp mixed spice
- ½ cup chopped nuts (optional)
- Zest of 1 orange
Instructions
- Preheat oven to 150°C (300°F).
- Soak dried fruit in rum/orange juice for at least 1 hour (or overnight for best flavour).
- Cream butter and sugar until light. Add eggs one at a time.
- Fold in flour, baking powder, spices, orange zest, and nuts.
- Add soaked fruit (including leftover liquid).
- Pour into a lined loaf tin.
- Bake for 1 hour 30 mins–2hours, until firm and golden.
- Cool completely before slicing—fruitcake tastes even better the next day!
