Ingredients

  • 2 cups mixed dried fruit (raisins, currants, cherries)
  • ½ cup mixed peel
  • ½ cup rum or orange juice
  • 1 cup unsalted butter (softened)
  • 1 cup brown sugar
  • 3 large eggs
  • 1 ½ cups flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp mixed spice
  • ½ cup chopped nuts (optional)
  • Zest of 1 orange

Instructions

  1. Preheat oven to 150°C (300°F).
  2. Soak dried fruit in rum/orange juice for at least 1 hour (or overnight for best flavour).
  3. Cream butter and sugar until light. Add eggs one at a time.
  4. Fold in flour, baking powder, spices, orange zest, and nuts.
  5. Add soaked fruit (including leftover liquid).
  6. Pour into a lined loaf tin.
  7. Bake for 1 hour 30 mins–2hours, until firm and golden.
  8. Cool completely before slicing—fruitcake tastes even better the next day!
