Ingredients

  • 2 cups mixed dried fruits (raisins, currants, prunes, cherries)
  • ½ cup rum OR fruit wine (for soaking)
  • 1 cup brown sugar
  • 1 cup unsalted butter
  • 4 large eggs
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp mixed spice
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • 1 tsp vanilla extract
  • 1 tbsp browning (for color)
  • ¼ cup molasses (optional for deeper richness)

Instructions

  1. Blend the dried fruits with the rum/wine until smooth or slightly chunky.
  2. Preheat oven to 160°C (320°F).
  3. Cream butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well.
  5. Stir in blended fruit mixture, vanilla, and browning.
  6. In another bowl, combine flour, baking powder, mixed spice, cinnamon, and nutmeg.
  7. Fold dry ingredients into the wet mixture gently.
  8. Pour into a lined baking tin.
  9. Bake for 1 hour–1 hour 20 minutes, or until a toothpick comes out clean.
  10. Optional: Brush top with a little rum after baking to keep moist.
