Ingredients
- 2 tbsp olive oil
- 1 onion (chopped)
- 1 large butternut squash (peeled, diced)
- 2 carrots (sliced)
- 3 cups vegetable broth
- ½ cup coconut milk or cream
- 1 tsp curry powder
- Salt & pepper to taste
Instructions
- Sauté the onion in the oil until fragrant.
- Add squash and carrots—cook 3–4 minutes.
- Pour in broth, curry powder, salt & pepper.
- Cover and simmer 20–25 minutes until tender.
- Blend until silky smooth.
- Stir in coconut milk and warm through.
