Bissap and Gnamakoudji are two of Togo’s most loved homemade drinks—always chilled, always vibrant, and always enjoyed with joy.
Bissap is a rich hibiscus drink, deep purple and lightly tangy, sweetened with spices.
Gnamakoudji is a fiery ginger drink—bold, aromatic, and perfect for waking up the senses.
Whether served at home, at parties, or sold in small sachets on the street, these drinks bring pure comfort and nostalgia in every sip.

🥤 Ingredients (For 6 servings)
For Bissap (Hibiscus Drink)
- 2 cups dried hibiscus leaves
- 1.5 liters of water
- 1 cup sugar (or to taste)
- 1 tsp vanilla essence
- Small handful of mint leaves
- Optional spices:
- 1 cinnamon stick
- 2 cloves
- 1 slice of pineapple (for aroma)
For Gnamakoudji (Ginger Drink)
- 250 g fresh ginger, peeled
- 1 liter of water
- 1/2 cup sugar (or honey)
- Juice of 1 lemon
- Optional:
- 1 clove
- Mint leaves
- Slice of fresh pineapple
🔥 Instructions
Bissap
- Rinse hibiscus leaves to remove dust.
- Boil them in water for 10–12 minutes with cinnamon & clove (optional).
- Strain into a bowl.
- Add sugar, vanilla, and mint. Stir well.
- Chill in the fridge until cold.
- Serve with ice cubes.
Gnamakoudji
- Blend ginger with half the water.
- Strain through a fine cloth or sieve.
- Add remaining water.
- Stir in sugar/honey and lemon juice.
- Chill until cold.
- Serve over ice.
