Beef Stew—Rich, Hearty & Full of Comfort

Ingredients

  • 2 tbsp olive oil
  • 800 g stewing beef (cut into chunks)
  • 1 onion (chopped)
  • 3 carrots (sliced)
  • 2 potatoes (diced)
  • 2 celery sticks (sliced)
  • 3 garlic cloves (minced)
  • 2 tbsp tomato paste
  • 1 tsp paprika
  • 1 tsp thyme
  • 1 tsp rosemary
  • 1 bay leaf
  • 400 g chopped tomatoes
  • 2–3 cups beef broth
  • Salt & black pepper to taste

Instructions

  1. Heat oil in a pot and brown the beef on all sides. Remove and set aside.
  2. In the same pot, sauté onions and garlic until soft.
  3. Add carrots, potatoes, and celery—stir for 3 minutes.
  4. Mix in tomato paste, paprika, thyme, and rosemary.
  5. Add browned beef back into the pot.
  6. Pour in chopped tomatoes and beef broth until everything is covered.
  7. Add bay leaf, salt, and pepper.
  8. Simmer 1½–2 hours on low heat until beef is tender and sauce is rich.
