✨ Short Introduction
Akara is one of Nigeria’s most beloved street foods—crispy on the outside and soft and fluffy on the inside.
Made from peeled black-eyed beans blended with peppers and onions, Akara is served hot and fresh in markets, roadside stalls, and homes every morning.
It’s simple, comforting, protein-rich, and full of Nigerian flavor—perfect as breakfast or a tasty snack.

🍽️ Ingredients (Serves 4 People)
For the Akara Batter
- 300 g black-eyed beans
- 1 medium onion, chopped
- 1–2 fresh chilies (or Scotch bonnets), chopped
- 1 red bell pepper (optional, for color), chopped
- ½ tsp salt
- 1 seasoning cube (optional)
- 80–100 ml water (just enough to blend)
For Frying
- 300–400 ml vegetable oil
👩🏽🍳 Instructions
1. Prepare the Beans
- Soak the beans in water for 20–30 minutes.
- Rub the beans between your palms to remove the skins.
- Rinse several times until all skins separate and float away.
2. Blend the Batter
- Combine peeled beans, onions, chili, bell pepper, seasoning cube, and a little water.
- Blend to a thick, smooth batter.
- The batter should NOT be watery—thick is key for fluffy akara.
3. Fry the Akara
- Heat oil in a deep pan (medium heat).
- Scoop the batter into the oil using a spoon.
- Fry until golden brown and firm on all sides.
- Remove and drain on paper towels.
4. Serve Hot
- Enjoy with pap (ogi), bread, stew, or simply as a warm street-style snack.
🌟 Mani’s Tips
💛 Add a pinch of baking powder for extra fluffiness.
💛 For a richer yellow color, add ½ small blended red bell pepper to the mixture.
💛 Do not overcrowd the pan—it makes the akara absorb oil.
