African Herb Roast Lamb Leg with Golden Vegetables

Ingredients

  • 1 whole lamb leg (about 2–3 kg)
  • 2 tbsp olive oil
  • 1 tbsp minced garlic
  • 1 tbsp ginger paste
  • 1 tsp paprika
  • 1 tsp ground coriander
  • ½ tsp cumin
  • 1 tsp thyme or rosemary
  • Salt & pepper to taste
  • 1 lemon (juice)
  • 2 carrots (chunked)
  • 4 medium potatoes (quartered)

Instructions

  1. Preheat oven to 190°C (375°F).
  2. Mix oil, garlic, ginger, paprika, coriander, cumin, lemon juice, salt & pepper.
  3. Rub the marinade all over the lamb leg (and under the skin if possible).
  4. Place carrots & potatoes in a roasting pan; place lamb on top.
  5. Roast 1 hour 45 min–2hours 30 min, depending on size.
    (Cover with foil if browning too fast)
  6. Rest 10 minutes before slicing.
