Moi Moi—Soft, Healthy & Flavorful Nigerian Bean Pudding

Moi Moi is a steamed bean pudding made with blended black-eyed beans, peppers, and onions. Soft, healthy, and full of flavor—perfect on its own or with rice, garri, or bread. 🫘✨

Ingredients

  • 250 g black-eyed beans (peeled)
  • 1 red bell pepper (120g)
  • 1 medium onion (120g)
  • 1–2 chili peppers
  • 40 g vegetable oil
  • 1 stock cube
  • Salt to taste
  • Optional: 1 boiled egg, sardines, or smoked fish (50–70g)**

Instructions

  1. Blend beans, bell pepper, onion, chili, and water into a smooth paste.
  2. Add oil, salt, seasoning, and optional fillings.
  3. Pour into ramekins or foil containers.
  4. Steam for 35–45 minutes until firm.
  5. Serve warm with rice, bread, or alone as a snack.
