Ingredients

Cake

  • 250 g plain flour
  • 300 g sugar
  • 2 eggs (100g)
  • 240 ml buttermilk
  • 120 ml vegetable oil
  • 15 g cocoa powder
  • 1 tsp vanilla extract (5 ml)
  • 1 tsp white vinegar (5 ml)
  • 1 tsp baking soda (5 g)
  • Red food coloring (liquid or gel)
  • Pinch of salt

Cream Cheese Frosting

  • 250 g cream cheese
  • 100 g butter (softened)
  • 200 g icing sugar
  • 1 tsp vanilla extract (5 ml)

Instructions

  1. Preheat oven to 175°C / 350°F. Grease two round cake tins.
  2. Mix flour, cocoa powder, and salt in a bowl.
  3. In another bowl, beat sugar and oil, then add eggs and mix.
  4. Add buttermilk, vanilla, and red food coloring. Mix well.
  5. Add dry ingredients into wet ingredients. Stir gently.
  6. Mix vinegar and baking soda separately, then add to the batter.
  7. Pour into tins and bake 25–30 minutes.
  8. Let cool completely before frosting.
  9. Whip cream cheese, butter, icing sugar, and vanilla until smooth.
  10. Frost the cake and decorate with berries or Christmas sprinkles.
