Butternut Squash Soup

Ingredients

  • 2 tbsp olive oil
  • 1 onion (chopped)
  • 1 large butternut squash (peeled, diced)
  • 2 carrots (sliced)
  • 3 cups vegetable broth
  • ½ cup coconut milk or cream
  • 1 tsp curry powder
  • Salt & pepper to taste

Instructions

  1. Sauté the onion in the oil until fragrant.
  2. Add squash and carrots—cook 3–4 minutes.
  3. Pour in broth, curry powder, salt & pepper.
  4. Cover and simmer 20–25 minutes until tender.
  5. Blend until silky smooth.
  6. Stir in coconut milk and warm through.
