Ingredients
- 2 tbsp butter or olive oil
- 2 large leeks (washed & sliced)
- 3–4 potatoes (peeled & diced)
- 1 onion (chopped)
- 3 cups vegetable or chicken broth
- 1 cup milk or cream
- Salt & black pepper (to taste)
- Optional: parsley or chives for garnish
Instructions
- Heat butter/oil in a pot and sauté the onions and leeks until they are soft.
- Add diced potatoes and stir for 2–3 minutes.
- Pour in the broth and bring to a boil.
- Reduce the heat and simmer for 20 minutes, or until the potatoes are tender.
- Blend the soup until smooth (or leave it chunky if you prefer).
- Add milk/cream, season with salt & pepper, and warm gently.
- Garnish with herbs and serve hot.
