Slow Sunday Roast—Tender, Juicy & Full of Comfort

Ingredients

  • 1.5–2 kg beef joint (topside, brisket, or chuck)
  • 3 tbsp olive oil
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp paprika
  • 1 tbsp dried thyme
  • 1 tbsp dried rosemary
  • Salt & black pepper to taste
  • 2 carrots (chopped)
  • 2 onions (quartered)
  • 4 cloves garlic (smashed)
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce (optional)

Instructions

  1. Preheat oven to 150°C (300°F).
  2. Mix olive oil with garlic powder, onion powder, paprika, thyme, rosemary, salt, and pepper.
  3. Rub seasoning all over the beef, coating completely.
  4. Place carrots, onions, and garlic in a roasting dish.
  5. Set the beef on top of the vegetables.
  6. Pour beef broth (and Worcestershire if using) around the sides.
  7. Cover tightly with foil.
  8. Roast for 3½–4½ hours, until fork-tender.
  9. Let rest for 10–15 minutes, then slice or shred.

Serving Tip 🍽️

Serve with roast potatoes, buttery carrots, and a rich pan-gravy made from the beef juices.
