Ingredients

- ½ cup rum OR fruit wine (for soaking)
- 1 cup brown sugar
- 1 cup unsalted butter
- 4 large eggs
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1 tsp mixed spice
- 1 tsp cinnamon
- ½ tsp nutmeg
- 1 tsp vanilla extract
- 1 tbsp browning (for color)
- ¼ cup molasses (optional for deeper richness)
Instructions
- Blend the dried fruits with the rum/wine until smooth or slightly chunky.
- Preheat oven to 160°C (320°F).
- Cream butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well.
- Stir in blended fruit mixture, vanilla, and browning.
- In another bowl, combine flour, baking powder, mixed spice, cinnamon, and nutmeg.
- Fold dry ingredients into the wet mixture gently.
- Pour into a lined baking tin.
- Bake for 1 hour–1 hour 20 minutes, or until a toothpick comes out clean.
