Ingredients
- 1 whole chicken or 1.5 kg beef roast (your choice!)
- 2 tbsp olive oil
- 1 tbsp ginger paste
- 1 tbsp garlic paste
- 1 tsp paprika
- 1 tsp suya spice
- 1 tsp thyme
- 1 tsp black pepper
- Salt to taste
- 1 lemon (juice)
- 3 carrots (chopped)
- 4 potatoes (quartered)
- 1 onion (chopped)
Instructions
- Preheat oven to 190°C (375°F).
- Mix oil, ginger, garlic, lemon juice, and seasonings into a marinade.
- Coat the chicken or beef completely in the marinade.
- Place chopped vegetables around it in a roasting pan.
- Roast:
- Chicken: 1 hr 20 min – 1 hr 40 min
- Beef: 2 hr – 2 hr 30 min
- Rest before serving—slice and share with joy.
