Ingredients
- 1 whole lamb leg (about 2–3 kg)
- 2 tbsp olive oil
- 1 tbsp minced garlic
- 1 tbsp ginger paste
- 1 tsp paprika
- 1 tsp ground coriander
- ½ tsp cumin
- 1 tsp thyme or rosemary
- Salt & pepper to taste
- 1 lemon (juice)
- 2 carrots (chunked)
- 4 medium potatoes (quartered)
Instructions
- Preheat oven to 190°C (375°F).
- Mix oil, garlic, ginger, paprika, coriander, cumin, lemon juice, salt & pepper.
- Rub the marinade all over the lamb leg (and under the skin if possible).
- Place carrots & potatoes in a roasting pan; place lamb on top.
- Roast 1 hour 45 min–2hours 30 min, depending on size.
(Cover with foil if browning too fast) - Rest 10 minutes before slicing.
