Ingredients
- 1 kg pork belly (skin on)
- 2 tsp salt
- 1 tsp black pepper
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp dried thyme
Instructions
- Pat the pork belly dry with paper towels—the drier the skin, the crispier the crackling.
- Score the skin lightly with a sharp knife.
- Rub olive oil over the skin.
- Mix salt, pepper, garlic powder, paprika, and thyme—season the meat side only.
- Roast at 220°C (430°F) for 30 minutes until the skin bubbles.
- Reduce the temperature to 180°C (350°F) and roast for another 1 hour.
- Rest for 10 minutes before slicing.
