📝 Ingredients

  • Ground peanut paste (unsweetened) – 250 g
  • Beef, goat meat, or chicken (cut into pieces) – 600 g
  • Smoked fish or dried fish – 150 g
  • Onion, chopped – 1 medium
  • Fresh tomatoes, blended – 300 g
  • Garlic, crushed – 2 cloves
  • Fresh chilli pepper – 1–2 (to taste)
  • Palm oil or vegetable oil – 2 tablespoons
  • Stock cube – 1 (optional)
  • Salt – to taste
  • Water – 1 litre

👩🏽‍🍳 Instructions

  1. Cook the protein
    In a pot, add the meat or chicken, onion, garlic, salt, and half of the water.
    Cook for 20–25 minutes until tender. Keep the stock.
  2. Prepare the peanut base
    In a bowl, mix the ground peanut paste with warm water until smooth and pourable.
  3. Build the sauce
    Add blended tomatoes and chilli to the cooked meat.
    Cook for 10 minutes until the tomato reduces.
  4. Add the groundnut paste
    Pour the peanut mixture into the pot, stirring continuously.
  5. Add smoked fish and seasoning
    Add smoked fish, a stock cube (if using), and remaining water.
    Stir gently and bring to a slow simmer.
  6. Cook slowly
    Reduce the heat and simmer for 25–30 minutes, stirring occasionally to prevent sticking.
    The sauce should thicken and release oil slightly.
  7. Final seasoning
    Taste and adjust salt. Remove from heat.

Serve hot with:

  • Rice
  • Fufu
  • Akume
